KOREAN SOYBEAN PASTE STEW

Today I am going to share with you how to make a simple home comfort food, Korean soybean paste stew, there are no meats added in this recipe apart from 1tsp of Korean fermented salted shrimp, you can leave it out if you don't like it. Some Korean people use anchovy stock to boil this stew, some Korean use rice water to boil this soybean paste stew. I like using rice water because is easy to prepare.
食材 (1-2人) 30分鐘內
- 食材
1開火,倒入250ml 米水入煲內煲滾
Turn on the heat, pour in 250ml rice water into the pot and boil
2米水滚起後加入薯仔、洋蔥
Once the rice water started boiling, you can add in the sliced potato and onion
3加入韓式大醬和蒜蓉拌匀
put in Korean soybean paste, minced garlic and stir well
4加入翠玉瓜
add in the courgette
5攪拌一下加入韓國蝦醬和辣椒粉,
stir it and add in Korean fermented salted shrimp and Korean chilli powder
6撈走表面泡沫.
skim off foam from the soup
7煲到薯仔諗就可以準備放入其他材料
When the potato become soft we can prepare and add in other ingredients
8加入辣椒
add in the chilli
9加入金針菇
add in enoki mushroom
10加入青蒜和剩餘辣椒滾多一會就可以熄火
add in leeks and the rest of the chilli and boil it for a little longer, the stew will soon be ready.
11完成
Finish and served.
